sirovi keksi od badema i murvi s jagodom


Već neko vrijeme nisam napisala recept za neko jelo ili desert koji je od glave do pete sirov i cjelovit, zaslađen samo voćem, kao što sam nekad radila. Kada sam počela sa cjelovitom biljnom prehranom, doslovno svi slatkiši koje sam jela i radila bili su ovog tipa; s vremenom sam se malo opustila oko prehrane, a i skužila da većini ljudi ne smeta malo agave ili kokosovog ulja u kolačima. Danas sam samu sebe razveselila s ovime, možda još nekoga razveseli, jedan slatki sirovi "za stara vremena"... Keksi od badema i murvi punjeni sirovim džemom od jagode.

što/
1 + 1/2 šalice mljevenih badema
1/2 šalice kokosovog brašna (može se koristiti i ribani kokos)
1 + 1/2 šalice sušenih bijelih dudova
5 žlica bijelih chia sjemenki
1/2 šalice vode
3/4 šalice jagoda
sok 1/2 naranče
2 medjool datulje
4 jušne žlice bijelih chia sjemenki

kako/
Za sirovi džem od jagode izblendajte jagode, sok naranče, datulje i 4 žlice bijelih chia sjemenki. Ostavite barem pola sata na sobnoj temperaturi da se zgusne.
Za "tijesto" stavite u blender ili jaču sjeckalicu suhe dudove i kokosovo brašno, te ih usitnite u prah. Pomiješajte mljevene dudove i kokosovo brašno s mljevenim bademima. Izblendajte chia sjemenke s vodom i prebacite dobivenu masu u zdjelu s bademima, dudovima i kokosom. Dobro izmiješajte, najbolje rukama, i ostavite smjesu da odstoji oko pola sata na sobnoj temperaturi da se malo zgusne. Razvaljajte smjesu i oblikujte kekse. Možete ih koristiti samo tako, sirove, a možete ih i dehidrirati nekoliko sati kako bi se malo osušili i stvrdnuli. Spojite po dva keksa sa "džemom" od jagode u sredini.

almond and mulberry cookies with stRAWberry jam

It's been a while since I wrote a recipe for a treat that is completely raw and wholesome. When I first started eating plant-based, this was the only type of treat I would enjoy, I had no need to use sweeteners or oils. With time, as I became a bit more relaxed with my diet (realizing that a tiny bit of coconut oil or agave every once in a while can't kill anyone), I also decided to get more creative with the recipes and include a wider range of ingredients, so that everyone could find something for themselves on this blog. Today I treated myself with good old raw cookies made from whole-food ingredients,  sweetened only with fruits - just like I used to make them years ago. Feeling nostalgic already? No, me neither... But I loved the cookies, and I'm sure you will too.

what/
1 + 1/2 cup ground almonds
1/2 cup coconut flour (or shredded coconut if you prefer)
1 + 1/2 cup dried white mulberries
5 tbsp white chia seeds
1/2 cup water
3/4 cup strawberries
juice of 1/2 orange
2 medjool dates
4 tbsp white chia seeds

how/
To make raw strawberry chia jam, blend the strawberries with orange juice, dates and chia seeds and let it sit for at least 30 minutes at room temperature to thicken. For the cookie "dough", first put the mulberries and coconut into a blender or a strong food processor and process them into powder. Mix them with ground almonds. Blend chia and water, and add this mass into the bowl with mulberries, almonds and coconut. Mix it well, preferably with hands, and let the batter sit for around 30 minutes to thicken. Roll it out and shape the cookies. You can use them right away, or dehydrate them for a couple of hours to give them more cookie-like feel. Spread the strawberry jam and connect two cookies with it.
