kuglice s cimetom i đumbirom


što/
1 šalica zobenih pahuljica*
2/3 šalice datulja
2/3 - 1 šalica ribanog kokosa
~1/2 šalice vode
1 čajna žličica cejlonskog cimeta
1 čajna žličica đumbira u prahu
malo naribanog muškatnog oraščića

kako/
Zobene pahuljice usitnite u prah pomoću blendera ili mlinca za kavu. Kokos izblendajte dok ne pusti ulje (ne mora se potpuno pretvoriti u maslac, ali u redu je i ako vam se to dogodi). Datulje i vodu izblendajte u pastu. Ako radite sa suhim datuljama, dobro ih je prethodno namočiti u toj vodi, a ovisno o suhoći, možda vam bude potrebno i malo više vode. Sve navedene sastojke, skupa sa začinima, izmiješajte u homogenu smjesu (u blenderu, u zdjeli pomoću vilice ili jednostavno rukama). Ostavite smjesu da malo odstoji u zdjeli kako bi zobene pahuljice apsorbirale vodu, a smjesa se zgusnula. Nakon 15-ak minuta možete oblikovati kuglice.

*ja sam koristila sitne (instant) zobene pahuljice upravo zato što su dvaput kuhane; neki ih zato izbjegavaju ali po meni žitarice moraju biti ili namočene, ili proklijale, ili fermentirane ili dobro kuhane. U ovom receptu bi u teoriji najbolje bilo koristiti proklijale zobene pahuljice, ali nisam to nigdje vidjela u Hrvatskoj za kupiti - ako netko je, neka slobodno podijeli info!

cinnamon&ginger balls

what/
1 cup oatmeal*
2/3 cup dates
2/3 - 1 cup grated coconut
~1/2 cup water
1 tsp ceylon cinnamon
1 tsp powdered ginger
a bit of ground nutmeg

how/
Grind the oatmeal into a fine powder. Process the coconut flakes in a blender until they are somewhat smooth (it's not necessary to make coconut butter out of them, but if they turn into a butter it's OK too). Blend the dates and water into a smooth paste. If you are using dried dates, it's good to soak them in that water for an hour before you use them, and if they are very dry, you might need a bit more water. Now mix all the ingredients, including spices, together into a homogeneous mixture. You can use a blender for that, or simply do it in a bowl with a fork or with your hands. Let the mixture sit for 15-30 minutes to thicken a bit as the oatmeal absorbs water, and then shape the balls.

*I used instant oats because they are already cooked and therefore easier for human body to digest, but it would be ideal to use sprouted rolled oats.
