For past fifty days or so I've been travelling around Thailand, Laos and Vietnam, gaining some first-hand impressions and knowledge about local cuisine and learning to cook traditional food from the natives who had been doing it that way their whole lives. I am beyond grateful for everything I have learnt so far, but also have to admit that I miss making food and desserts my way and developing recipes for plant-based meals and sweets. At the moment, I am exploring the beautiful Lâm Đồng Province in Central Highlands of southern Vietnam - the land of pine trees, (arabica) coffee and strawberries. It's snowing in Croatia and we are surrounded by juicy strawberries! They reminded me of strawberry chia pudding that I love to make in may in Croatia. Be it with home-made plant yogurt, coconut milk or rice milk, i just love the sweet and tender taste of it. I remembered an old recipe that I had never published on the blog before, so here it is now. I know it is not the strawberry season where most of you are now, but if you have some in the freezer (it can be some other berries as well), you could use them to make this delicious spring-summer treat.
{white chocolate and mint cream with coconut and strawberry chia pudding}
what/
100 g cashews
50 g cacao butter
160 ml rice milk or water
~6 tbsp agave nectar
1 handful fresh mint
1 tsp spirulina powder
5 (heaping) tbsp chia seeds
400 ml full fat coconut milk
150 g strawberries
how/
Blend the cashews, melted cacao butter, rice milk, mint, spirulina and 3 tbsp agave nectar into a smooth cream, pour it into glass jars and let it cool down and thicken in the fridge or freezer. Mix 2 tbsp chia seeds, coconut milk and 2 tbsp agave and let it sit for at least 15 minutes or until chia seeds absorb water. Blend the other 200 ml coconut milk with strawberries and 1 tbsp agave, mix it with 3 tbsp chia seeds and let it sit as well. When the mint cream has thickened, carefully pour two layers of chia pudding on top of it and put it in the fridge for a couple of hours to chill and thicken properly. Enjoy! 🌿
