spaghetti in avocado sauce
what/
1 ripe avocado
4 handfuls of young spinach leaves
2 garlic cloves
1/4 smaller onion
1/2 smaller parsley root
1-2 pinches himalayan salt
1 pinch black pepper
2 tbsp nutritional yeast
250 ml water
160 - 200 g dry corn or spelt pasta (this time I was too much in a rush to make my own pasta)

how/
Cook the pasta. Chop all the vegetables and pour 250 ml of hot water over them. Cover it and let it sit for 5 minutes. Slice the avocado and put it in a blender together with the vegetables and hot water in which you had soaked them. Add salt, pepper and nutritional yeast and blend it until smooth. Pour the sauce over the pasta and enjoy this simple and delicious meal!
