Još nešto nesirovo ali toliko dobro da bi bilo šteta ne pravit i ne jest... Meni su izvrsne jer su hranjive, bezglutenske, bez ulja, nemaju onaj teški okus heljde koji mnogima smeta, i brzo se peku. Probajte, probajte!

2/3 šalice integralnog heljdinog brašna
2/3 šalice rižinog brašna
1/3 šalice suncokretovih sjemenki
1 zrela banana
1 i 1/2 šalica vode (može i malo više - do 2 šalice)
1/2 jušne žlice mljevenih chia sjemenki
1/2 jušne žlice mljevenih lanenih sjemenki
1 čajna žličica cejlonskog cimeta u prahu
1 čajna žličica kakaa u prahu

Sve sastojke dobro izblendajte u blenderu. Prelijte u staklenku, poklopite i ostavite da odstoji barem nekoliko sati kako bi heljda, chia i lan apsorbirali vodu i kako bi smjesa počela lagano fermentirati. Može se ostaviti i preko noći. Dobro ugrijte tavu na najmanjoj vatri /bez ulja/ i žlicom nanosite smjesu i formirajte palačinke (smjesa će biti pregusta da bi se samo izlijevala na tavu). Okrenite palačinku na drugu stranu tek kada s gornje strane više ne bude sirovih dijelova (slika 2), pa pecite još oko pola minute do minutu na drugoj strani.
Poslužite uz tahini, orahe, datulje, datuljin sirup, svježe banane i jabuke....
buckwheat pancakes
Delicious, nutritious, gluten-free, oil-free, easy and quick to bake, and without that strong buckwheat flavour that some people can't stand (not me, i love buckwheat, hihi).

2/3 cup whole grain buckwheat flour
2/3 cup rice flour
1/3 cup sunflower seeds
1 ripe banana
1 + 1/2 cup water (or up to 2 cups)
1/2 tbsp ground chia seeds
1/2 tbsp ground flax seeds
1 tsp ceylon cinnamon
1 tsp ground cacao
a pinch of himalayan salt

Blend all of the ingredients in a blender. Pour the mixture into a jar, cover it with a lid and let it sit for at least a couple of hours, or, even better, overnight. Heat the pan on the lowest heat /no oil!/ and use a spoon to form pancakes (the mixture will be too thick to just pour it onto the pan). Turn the pancake on the other side when there are no raw parts on the top, and bake it for another 30-60 seconds.
Serve with tahini, walnuts, dates, date syrup, fresh bananas and apples....
