juha od batata pečenog u pećnici

oven-baked sweet potato soup

what/
1 + 1/2 cup purple sweet potato, cut into cubes
1 + 1/2 cup water
1 handful sunflower seeds
1 large onion
3 large garlic cloves
1/2 carrot
1 small parsley root
a piece of celery root
2 tbsp soy sauce
1/2 tsp grpund chili
1 pinch black pepper
2 tsp nutritional yeast

how/
Put one cup of cubed sweet potato, carrot, half of an onion and all the garlic into a baking tray, oil with just a little bit of coconut oil (rub 1 tbsp melted coconut oil on sliced vegetables to cover them equally) and bake on 200 °C for aroumd 20 minutes. Put the rest of the vegetables and spices into a saucepan with water and cook for around 10 minutes after boiling. Caramelized note that baked sweet potato will give ti this dish is amazing, but ww don't want to overdo it and make the flavour too intense. That is why I cooked the rest of the vegetables. Transfer the baked vegetables into the pot after you removed it from the heat, add sunflower seeds and more water if needed, and blend everything until smooth. I decorated the soup with dried goji berries and minced cashews because they really complement this soup's sweet taste and rich flavour.
