amaranth crackers
what/
1/2 cup ground amaranth seeds
1/2 cup rice flour
1/2 cup corn flour
1 tbsp psyllium husks
2 tbsp flax seeds
3/4- 1 cup water
1-2 tbsp melted coconut oil (can be substituted with 2-3 tbsp almond butter)
1 pinch himalayan salt
how/
Mix the flours, amaranth and psyllium in a bowl, add the himalayan salt, oil and flax seeds that you had soaked in water for ~20 min and knead a dough (add some more water if needed). Let it sit for 10-15 minutes, then roll it out on a baking tray and cut into squares. Bake it on 190°C for ~15 minutes.
