Flax seed tortilla, inspired by amazing Jelena from Cooking with the cat (thank you!!) ♡

I've been bumping into flax seed tortilla recipes around the Internet for quite some time now, and I kept postponing trying to make them although they looked pretty cool. Well, I'm so glad that I finally made them!

I'm not exaggerating when I say this is the best tasting tortilla that i EVER ate! Already made them 3 times and I can't get bored.. For those of you who can't really stand the taste of flax seeds, here you really can't tell! People were surprised when I told them it was made from flax seeds.

what/

{for 6 medium-sized tortillas}

1 cup golden flax seeds (just because they are milder tasting and lighter in colour than brown flax)
4/5 - 1 cup water
1-2 pinches himalayan salt (i use 2 because i only eat it with fresh and steamed greens, nothing else)
2 generous pinches powdered nutritional yeast

how/
Grind the flax seeds as finely as you can and mix them with salt and nutritional yeast. If it's too coarse, the dough will be stickier and more difficult to handle, but still doable and tasty. Pour boiling (!!) water over the ground flax seeds and mix with a spoon, quickly and efficiently. The dough will soon thicken as the seeds absorb water. When it's thick enough to handle, form small balls and flatten them into tortillas. You can dust the dough balls with tapioca starch or rice flour if they are too sticky. Bake the tortillas on a dry non-sticking pan for 1-2 minutes on each side. That's it, super easy and delicious!

P.S. Look how nicely they blow on the pan, just like real tortillas or chapati bread! I'm in love, seriously...
